After sharing some of this awesome okra with co-workers, I was asked to post the recipe. It’s simple, quick and a great grab and go option when you’re on the run. The secret to this recipe is the Infused Butter Oil mentioned in yesterday’s post. You can find this oil at most olive oil boutiques that are starting to crop up and yes, it’s a bit pricey, but money well spent because it makes anything you drizzle it on taste twice as good! The good news is that you have a handy option if you want to substitute some high quality butter from grass fed sources, like Kerrygold. I recommend melting it in a saucepan first so you have the “drizzle factor.” I have friends that don’t like okra that love this stuff!

 

 

  • 1 lb okra
  • 1/2 cup butter oil
  • 4 garlic cloves-pressed
  • Mediterranean salt to taste (Be generous. This is good salt)

Preheat the oven to 350. Place the okra on a cookie sheet or clay baking sheet. Drizzle the butter oil, sprinkle the salt and crush the garlic. Mix well with your hands. Place in the oven on 350 for 20 minutes. Remove and cool. That’s it!
